Roasted Beetroot Dip

Roasted Beetroot and Sun Dried Tomato Dip

Ingredients
140g Sun Dried Tomatoes
4 Beetroots
100g Raw Cashews
1 Red Chilli
1 Lemon
Pepper

Method
Top and Tail Beetroot and add to a roasting pan with 4 tbsp of oil and 4 tbsp of water. Cover tightly with foil and roast for 60 mins.

Add SD Tomatoes, Cashews and Chilli to the TM Bowl and chop for 4 seconds on speed 7.
Add peeled Beetroot, Lemon and lots of cracked pepper and mix for 4 seconds on speed 5.

Serve

This is a favourite of mine, I love this dip. Alternatively it works nicely as a salsa with fish as well!

Chicken and Sweet Corn Soup

This recipe was all too easy in the Thermomix!

Chicken and Sweet Corn Soup

Ingredients

5g fresh Ginger
400g Chicken Thighs
3 Spring Onions
1 Onion
2 tbsp TM Vegetable Stock Concentrate
800g Water
1 can Creamed Corn
1 Corn on the Cob
1 tbsp Tamari
1 Egg, whisked
1 tbsp Oil

Method

Cut chicken into thing strips
Place ginger in TM bowl and grate for 4 seconds on speed 7.
Place in onion, peeled and quartered and chop for 3 seconds on speed 7.
Add oil and saute onion and ginger 2 mins  100 degrees speed 7.
Add creamed corn, chicken, spring onions, tamari, stock and water. Place corn into Varoma and put in place. Cook for 15 minutes, Varoma temperature, Speed 2 on Reverse
When cooked, take off Varoma Tray, turn to speed 1 and pour in the whisked egg (10 seconds). Quickly put MC back on and stir on reverse for 30 seconds more.
Cut off corn kernels and add to soup and serve!

I feel I have neglected this blog lately! Today I started a Friday bootcamp with the girls and came home and whipped this up for extra energy to get through the day!

1 Banana
2 Kiwi Fruit skins on
2 tablespoons Chia Seeds
250ml Water
Handful of Spinach

Blend 1 minute on Speed 9

Very Tasty!

Green Smoothies

The Triple Green
Ingredients
50g Frozen Pineapple
20g Frozen Berries
1/4 cup coconut flakes
1 orange peeled
1 tbsp Chia Seeds
Handful Mint
Handful Parsley
Silverbeet Leaves
375ml Water
1tsp Cinnamon


Method
Blend in Thermomix Speed 9 60 Seconds


Green Ginger Zing
Ingredients
Knob Ginger
1/2 Cucumber
100g Papaya
40g Celery
1 Lime Squeezed on the lid
1 Pear (cored)

Blend in the Thermomix Speed 9 60 Seconds

1 Pear (cored)
1 Handful Spinach

Blend in the Thermomix Speed 9 60 Seconds


The Mean Green
Ingredients
15g Spinach
30g Silverbeet
20g Carrot
5g Ginger
90g Paw Paw
1 Orange Peeled
250ml Water

Method
Blend 60 Seconds Speed 9

Kiwi Lime Mint Sorbet

This is the most refreshing sorbet I have made. Kiwi fruits are rich in many Vitamins, flavonoids and minerals. In particular, they contain a high amount of Vitamin C (more than oranges), as much potassium as bananas and a good amount of beta-carotene.

Ingredients

80-100g sugar (raw sugar or rapadura)
3 Kiwi Fruits peeled
1 handful of mint
Zest of a Lime
Lime Juice
1 egg white
2 x 350g ice cubes

Method

Mill sugar and zest 10 seconds speed 9
Add fruit, 350g ice & egg white. Slowly turn to speed 10.

Add remaining ice after 20 seconds. Use spatula to assist.
Process for approximately 1 min/speed 10

Bill's Meatballs & My Zuchinni Mash

I simply love Bill's Meatballs from Simply Bill - Bill Granger. I have been making these for years for the kids but always found them a a bit of a chore as they call for a grated onion and lots of chopped herbs. Definitely grating an onion is something I can do without. Today I have adapted this recipe to the Thermomix and alas it was all too easy!


Bills Meatballs
Ingredients
500g Rump Steak (chopped to 2cm cubes)
1 small onion
55g breadcrumbs (can be pre made in the TM)
3 tbsp flat leaf parsley
3 tbsp fresh coriander
1 to 2 small chilli's
1 egg lightly beaten
1 tsp ground cumin
1 tsp paprika
fresh ground pepper
3 tbsp olive oil
2 x 400g tin chopped tomatoes
1/2 tsp sugar


Method


Preheat oven to 200 degrees.
Place onion and herbs in TM bowl and Chop for 2-3 seconds on speed 7.
Put herbs aside into a bowl.
Add rump to the TM bowl and mince Turbo button 3-6 times until desired consistency and add to onion mixture.
Add all remaining ingredients into the bowl and mix well together. Shape into meatballs and add to roasting pan with oil and toss well.
Bake for 15 minutes. Transfer them to a frying pan over medium head and add the tomatoes and sugar, salt and pepper. Stir the meatballs carefully to coat and simmer for 20 minutes. Serve with Zucchini Mash.


Zucchini Mash


Ingredients


800-1kg of Floury Potatoes (chopped to 2cm cubes)
200-250g Milk (or half water half milk)
1 large Zucchini
1 small onion
1 tbsp olive oil
Salt and Pepper


Method


Place onion and zucchini in TM bowl and chop for 2-3 seconds on speed 7.
Add oil and saute for 2 minutes on Varoma temperature on speed 1.
Place milk, salt and chopped potatoes into TM bowl.
Cook for 20 minutes at 100 degrees on speed 1.
If after 20 minutes the potatoes need mashing you can insert the butterfly and mash further for 20-30 seconds on speed 3-4. After 20 minutes my potatoes were well cooked and required no further mashing. Other variations could be to add butter or plain yogurt, olive oil or Parmesan.









Spelt Bread Rolls

I love being able to mill my own flour from the grain. I still cannot believe how simple quick and easy this machine is to make bread! Zarni loves the platted or the knots that I have been making and takes them for school lunches with some homemade butter and vegemite (or some healthier alternatives on other days). With this bread there are only 5 ingredients, unlike the wonder bread packet that has 35 unrecognisable ingredients!


Ingredients
100g Spelt Grain
300g Lukewarm water
1 sachet dry yeast
1 tsp Salt
400-420g Bakers Flour
20g Olive Oil


Method
Place spelt into the TM bowl. Mill for 1 minute on speed 9.
Add first water then yeast, salt, flour and oil. Mix for 5 seconds on speed 7 to combine.
Set dial to closed lid position. Knead the dough for 2 minutes on Interval speed.

Place the dough into a slightly oiled bowl or wrap in a baking mat. Leave dough in a warm position to prove for 20 to 30 minutes. Dough should double in size.

Once dough has risen, shape into dinner rolls or place in a bread tin.
Place into a cold oven and bake for 25 minutes at 180 fan forced or 200 without.
