This recipe was all too easy in the Thermomix!
Chicken and Sweet Corn Soup
Ingredients
5g fresh Ginger
400g Chicken Thighs
3 Spring Onions
1 Onion
2 tbsp TM Vegetable Stock Concentrate
800g Water
1 can Creamed Corn
1 Corn on the Cob
1 tbsp Tamari
1 Egg, whisked
1 tbsp Oil
Method
Cut chicken into thing strips
Place ginger in TM bowl and grate for 4 seconds on speed 7.
Place in onion, peeled and quartered and chop for 3 seconds on speed 7.
Add oil and saute onion and ginger 2 mins 100 degrees speed 7.
Add creamed corn, chicken, spring onions, tamari, stock and water. Place corn into Varoma and put in place. Cook for 15 minutes, Varoma temperature, Speed 2 on Reverse.
When cooked, take off Varoma Tray, turn to speed 1 and pour in the whisked egg (10 seconds). Quickly put MC back on and stir on reverse for 30 seconds more.
Cut off corn kernels and add to soup and serve!
